CRETE'S HARD CHEESE BIODAY

Crete's hard cheese is the forerunner of the Crete's Graviera cheese P.D.O. A hard cheese, with a strong spicy taste and aroma. It's usually produced using Greek sheep's and goats milk in a 50% sheep's milk and 50% goat's milk ratio.

Depending on the maturation conditions, the sheep's-goat's milk ratio and the period of the milk collection its color may vary from oyster white to pure white. It's an exceptional cheese for two-handled flying pen or grated in pasta and in addition it gives a unique flavor when used in pies.
