The milk collection from the Greek sheep's and goats, starts very early in the morning, in the dawn of the day. After being milked the milk is put in special cooling basins (ice basins) which preserve its temperature up to +2 C.

The milk for the BIODAY company's products is collected from the ice basins using a special insulated tank which has separate parts in order to avoid mixing the sheep's milk with the goat's milk. In this way the milk's temperature is preserved in low levels until it reaches the cheese-dairy and its cheese-making procedure begins.

At the cheese-dairy there are special insulated milk tanks with a capacity of 5 to 8 tons of milk each, in which the milk remains with its temperature preserved low until the moment that its processing for the production of the dairy products begins.

At least three times each month, during the milk receiving procedure by the shepherd, samples are collected which are chemically and microbiologically examined by a certified laboratory of analyses.

Apart from the above chemical and microbiological examination a frequent milk inspection is carried out for the detecting of antibiotics. In case of discovering even the least quantity of antibiotic, this milk is not uses. With this way we are absolutely sure that the milk which is being used in the BIODAY products meets the quality and hygiene specifications.

At the cheese-dairy is daily gathered all the milk from the milk zone into the special cooling chambers. Before the beginning of the production process the milk is tested one more time, which is obligatory for all the companies which use the HACCP system, just as it's requested by all the suppliers of the BIODAY company.

The BIODAY cheese production, that is the cheese making, is completed on the same day so that the final product the cheese, keeps all those nourishing ingredients which make it so indispensable and important in our daily nutrition.

In addition to all these, it is important to support the Greek shepherd because this is the only way to support the quality of the products he produces.
